Marcalberto’s “ASTI METODO CLASSICO” is a very aromatic, vibrant and fruity Metodo Classico Asti DOCG Dolce made from 100% Moscato Bianco grapes.
It is produced according to the ancient tradition of the second half of the 19th century (before Martinotti method) when wines were submitted to the sparkling process with the second fermentation in bottle.
Harvested at the beginning of September, the Moscato grapes will undergo vinification through soft pressing of whole grapes whit traditional “Marmonnier” press. Very low yield.
The beginning of fermentation is in steel at controlled temperature, while the traditional second fermentation is in the bottle for at least 12 months.
The appearance shows a plum-yellow colour with moss green hues, and a persistent perlage. The nose is very expressive and unmistakably aromatic from the Moscato grape: fruity bouquet of pear, apple and citron peel, sweetish hints of sponge cake and notes of chinotto, combined with floral aromas of orange, rose, geranium, lily of the valley, and a delicate sage undertone.
The palate follows beautifully with a long and aromatic persistence.
Food-match: ideal companion of desserts, especially with apple and pear tarts, or hazelnut cakes. Perfect with all types yeasted desserts such as Panettone, Pandoro or Colomba Pasquale. Excellent also as aperitif.
Try it also in combination with seafood and freshwater fish.
Recommended serving-temperature of 7°-9°C.
