The wine then matures sur lie for approximately 60 to 90 days, with weekly bâtonnage. \u003cbr\u003e\nDuring the winter, the wine stabilises and clarifies naturally through sedimentation. Decanted at the end of winter and bottled in the spring following the harvest.\u003c\/p\u003e \n\n\u003cp\u003eThe appearance shows a straw-coloured hue with brilliant green hues. The nose is delicately balsamic with fruity \u0026amp; floral notes and fresh hay, and an iron and mineral finish. \u003cbr\u003e\nThe taste is generous, savoury and enveloping, opening in fresh grapefruit, citrus and ending with a typically mineral note. \u003cbr\u003e\nEtna's Carricante wines are prized for their freshness, complexity and uniqueness, reflecting the region's unique volcanic terroir.\u003cbr\u003e\nFood-match: A perfect aperitif compagnon.
