These characteristics inspired the colours of the packaging: the dark brown of the earth and the light blue of the sky.\u003c\/p\u003e\n\n\u003cp\u003eHarvested half-way September, vinification will undergo classic white wine process “off skins” by gentle pressing. A primary fermentation at controlled temperature with selected yeasts. \u003cbr\u003e\nThe second fermentation occurs in large tanks following the Metodo Martinotti, with foaming taking place within 25-30days. Refinement on the yeasts for about 10 months, followed by 2 to 3 more months refinement in the bottle.\u003c\/p\u003e  \n\n\u003cp\u003eThe appearance shows a straw yellow colour. The mousse is fine and persistent, and a gorgeous nose invites with a very subtle and refined bouquet of fresh and fragrant fruit. \u003cbr\u003e\nThe palate is harmonious, with a clean, fruity and well-balanced, vibrant sip.
