Bortolomiol’s “MAIOR” (Hills of Valdobbiadene DOCG area) is a delicate, floral and aromatic Prosecco Superiore DOCG made from 100% Glera grape variety, with a fine and persistent perlage in its Dry-style version.
The Maior stands out for the roundness of its taste, for its softness and a pleasing level of sweetness which places it towards the sweeter end of the Valdobbiadene Prosecco Superiore DOCG spectrum.
Harvested by hand in the first half September, vinification will undergo classic white wine process “off skins” by gentle pressing, and a primary fermentation at controlled temperature with selected yeasts.
The second fermentation occurs in large tanks following the Metodo Martinotti, with foaming taking place within 25-30days, and a fining period of about 30 to 60 days in bottle.
The appearance shows an inviting straw yellow colour. The mousse is fine and persistent, and an aromatic and fruity nose invites us with mature exotic fruit and delicate sweet white flowers.
The palate is dense and concentrated, elegant, yet delivering freshness in this slightly sweet version as a “Dry-style” Prosecco (i.e. 22gr/l sugar residue)
Food-match: a beautiful combination with desserts such as not overly sweet cakes, but can also be enjoyed with savoury dishes. It’s perfect with hot Asian sweet & sour dishes as it well matches their spiciness and their sweetness.
A traditional Venetian dish such as “Sarde in Saor” made with pine nuts and raisins is a traditional example from the region.
Recommended serving-temperature of 6°-8°C.
