Mattioli’s “YLICE” (“cru” vineyard ‘La Spina’ at 350m a.s.l. in Serra de’ Conti) is a fragrant, fruity, elegant and mineral dry white wine made from 100% Verdicchio grapes.
The name Ylice was inspired by a 12th century ancient villa known as ‘il castellare de Ylice’, which was near the current cellar of the family. The passion and respect for their territory has led the family to pass on the name of that ancient presence.
Harvested manually in two specific periods (50% earlier stage of maturation / 50% at full maturation) the vinification process is carried out with soft pressing and a cold pre-fermentative maceration for a few days.
Alcoholic fermentation takes place in steel tanks for 10/!2 days at controlled temperature between 14/16°C).
Refining in steel tanks with frequent “batonnage” for a period of 6 to 8 months, the wine is then bottled in the next summer following harvest, and kept resting yet 3-4 months before market release.
The appearance shows a beautiful straw-yellow in colour with clear greenish highlights and excellent luminosity.
The bouquet delivers intense and fragrant aroma, particularly fruity & floral nuances, with notes of acacia, yellow rose, white peach and a distinct almond aroma, typical of the Verdicchio grape variety, as well as a light vegetal note at the end.
The palate stands out for the complexity of the aromas, the persistence and above an important sapid note which supports its evolutionary capacity, elegance and great cellaring potential.
The finish is fresh and enveloping, with a very pleasant citrus emerging. Food-match: a classic and elegant expression Verdicchio which can accompany you throughout the whole meal.
Food Match: perfect in combination with seafood and crustaceans, oysters, vongole, as well as grilled vegetables. A nice combo with white meat too, though. Enjoy it also by the glass as a meditative sip.
Recommended serving-temperature of 8°-10°C.
